Hot Corn Dip

Ingredients
25 slices of bacon
35 oz cream cheese, room temperature
1 bag (2kg)
Arctic Gardens Corn Supersweet
4 jalapeno peppers, seeded and diced
6 cups shredded mozzarella cheese
2 tsp garlic powder
4 tsp. smoked paprika
1 tsp. cayenne pepper
Pepper to taste
6-8 green onions, chopped
1 cup cubed cheddar cheese (optional)
1⁄2 cup chopped fresh or dried chives
Preparation
1. Preheat oven to 205°C (400°F)
2. Preheat a skillet over medium-high heat, cook bacon slices 4-5 minutes or until crisp. Pat dry with paper towels and cut into small pieces.
3. Thaw corn in boiling water, drain well.
4. Place 2/3 of the thawed corn, cream cheese, jalapeno, mozzarella and dry seasonings in a food processor. Grind, transfer to a bowl and add the
remaining 1/3 of the corn kernels, bacon and chopped green onions. Portion out mixture into ovenproof dishes. Top with cheddar cheese cubes.
5. Bake for 15-20 minutes.
6. Garnish with chopped chives and serve with nachos, breads, etc.
