Californian Vegetable Hash with Citrus Butter

Ingredients
- 2 kg (8 cups) of Arctic Gardens California Mix
Citrus butter:
- 454 g (16 oz) of unsalted butter, creamed
- 2 (juice and zest) limes
- 2 (juice and zest) lemons
- 1 (juice and zest) orange
- 8 drops of Tabasco sauce
- Salt and ground black pepper to taste
This recipe can also be done by combining Arctic Gardens Micro Broccoli Florets , Arctic Gardens Crinkle Sliced Carrots and Arctic Gardens Cauliflower .
Preparation
- In a mixing bowl, mix butter, citrus juice and zest, Tabasco sauce, salt and pepper.
- Mix all ingredients together well until butter is smooth and creamy.
- Spread the citrus butter onto a sheet of parchment paper and roll into a log of about 4 cm (1½ inch) in diameter. Store citrus butter in the fridge.
- Steam or boil the frozen California vegetable mix in boiling salted water for 4 to 5 minutes.
- In a frying pan, melt citrus butter and sauté hot, cooked California vegetable mix.
- Correct seasoning and serve.
Note: Ratio of citrus butter to 25 servings of 80 g = +/- 18 g
