Fall vegetable soup with maple and curry

Ingredients
2 bags
Arctic Gardens Stew Mix
or
Arctic Gardens Fall Medley
2 tbsp (30 mL) canola oil
1 cup (250 mL) maple syrup
1/4 cup (50g) minced garlic
28 cups (7L) water
2 oz (50g) chicken broth base
2 tbsp (30g) curry powder
Salt and pepper to taste
1 cup (250 mL) hot 35% cream, optional
Chopped parsley
Preparation
1. In a pot, sweat the vegetables with the oil for 2 minutes.
2. Add maple syrup, garlic, water, chicken broth and curry powder.
3. Bring to a boil, reduce heat to medium and simmer for 30 minutes.
4. Blend with a mixer until smooth.
5. Return to heat and season to taste with salt and pepper.
6. Serve in a bowl with parsley and a drizzle of hot cream if desired.
