Banana Cake with vegetables

Ingredients
3 cups
Arctic Gardens Mixed Vegetables Blend
2 cups unbleached flour
1 1/2 cups almond powder
1 cup brown sugar
2 tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
4 mashed bananas
4 eggs
1/2 cup canola oil
1 1/2 cup semi-sweet chocolate chips
2 tsp. vanilla extract
Preparation
1. Preheat the conventional oven to 350°F (180°F)*.
2. In a saucepan, bring water to a boil and cook the mixed vegetables for 2 minutes. Drain and cool under cold water. Drain again and blend in a food processor to a smooth purée.
3. In a large bowl, combine all the dry ingredients.
4. In another bowl, combine the mixed vegetables purée with the mashed bananas, eggs, oil, chocolate chips and vanilla extract.
5. Pour over dry ingredients and mix with a fork.
6. Pour into loaf pans and bake in center of the oven for 45-50 minutes or until a toothpick inserted in the center of the cakes comes out clean.
* If using a combi oven, adjust the baking time accordingly.
