Ingredients

Preparation

  1. Heat oil in a large pot and sweat onion and garlic for 2 minutes. 
  2. Add stock and the Ancient grain mix,  simmer for 20 minutes.**
  3. Drain beans and add to pot along with diced tomatoes, spinach, and tomato paste. Simmer for another 10 minutes.
  4. Add cilantro and parsley when ready to serve.

** If dry barley is added instead of the Ancient Grain mix, simmer for 40 minutes.
