Barley and six-bean soup

Ingredients
- ½ cup (125 ml) Canola oil
- 4 cups (625 g) Arctic Gardens Diced Onions
- 5 tbsp. (50 g) Chopped garlic
- 22 cups (5.5 L) Homemade chicken stock
- ½ bag (1kg) of Arctic Gardens Ancient Grain Blend
- 1 can (2.84 L) can Arctic Gardens Six-Bean Salad
- 4 cups (700 g) Diced Italian tomatoes
- 1 bag (500 g) Arctic Gardens Chopped Spinach
- ¾ cup (40 g) Chopped cilantro
- ¾ cup (40 g) Chopped parsley

¼ cup (80 g) Tomato paste
* if you don't have the Ancient grain mix, remplace by : 2½ cups (625 g) Pearl barley and add 6 cup of additionnel chicken broth
Preparation
- Heat oil in a large pot and sweat onion and garlic for 2 minutes.
- Add stock and the Ancient grain mix, simmer for 20 minutes.**
- Drain beans and add to pot along with diced tomatoes, spinach, and tomato paste. Simmer for another 10 minutes.
- Add cilantro and parsley when ready to serve.
** If dry barley is added instead of the Ancient Grain mix, simmer for 40 minutes.
