Bean salad and israeli couscous

Ingredients
- 1 bag (2 kg) Arctic Gardens 7 Bean Salad
- 1 cup (200 g) Uncooked Israeli couscous
- ¾ cup (100 g) Diced red onion
- 1¼ cup (150 g) Diced green bell pepper
- 2½ cups (300 g) Diced Italian tomatoes
- 2½ cups (300 g) Diced cucumber
- 1¼ cup (200 g) Diced dried apricot
- 1¼ cup (150 g) Sliced black olives
- 2½ cups (125 g) Chopped fresh parsley
- 1¼ cup (60 g) Fresh cilantro
- ¾ cup (30 g) Fresh mint
- 1¼ cup (300 ml) Olive oil
- ½ cup (125 ml) Lemon juice
Preparation
1. Cook Israeli couscous according to instructions on package. Rinse with cold water.
2. Steam 7 Bean Salad for 5 minutes. Let cool.
3. Chop fresh herbs in a food processor, pour into a large bowl, and add olive oil and lemon juice. Mix well.
4. Toss all ingredients together and serve cold with pita bread.
