Beef stew with root vegetables and beer

Ingredients
1/2 cup (120mL) olive oil
1/2 cup (120mL) salted butter
4 kg (8lbs) boneless beef chuck, cut into cubes, or beef cubes for stewing
Salt and pepper to taste
4 yellow onions, diced
1 cup (250mL) toasted flour or all purpose flour
4 Guiness beers (1,7L) or Leffe
6 cups (1.5L) beef broth
8 bay leaves
16 juniper berries

2 cups (500mL) dried prunes
1/2 cup (125ml) brown sugar
Preparation
1. Preheat oven to 325°F (160°C).
2. In an ovenproof cast-iron pan or casserole, melt butter and oil then brown meat. Season with salt and pepper. Set aside on a plate.
3. In the same pan, brown the onion. Sprinkle with flour and mix well. Deglaze with beer and bring to a boil, stirring constantly.
4. Return meat to pan. Add beef broth, salt, pepper, bay leaves and juniper berries.
5. Cover and bake for 2 hours.
6. Add frozen vegetables, prunes and brown sugar. Cover and return to oven for approx. 1 hour or until vegetables are cooked and meat is tender. Adjust seasoning if necessary before serving.
