Beet, Corn and Cilantro Salad

Ingredients
1 can (2.84L) Arctic Gardens Chunky Beets , drained
3 can (540mL) Arctic Gardens Whole Kernel Corn , drained
1 cup (250 ml) green onions, chopped
500 ml (2 cups) red pepper, chopped
4 tbsp (60 ml) jalapenos, sliced
1/2 cup (125 ml) Canola oil
125 ml (1) orange juice and zest
125 (2) lime juice and zest
4 tbsp (60 ml) cider vinegar
2 tsp (10 ml) ground cumin
2/3 cup (160 ml) cilantro, freshly chopped
1/4 tsp (1 ml) sea salt
1 tbsp (15 ml) white sugar
Preparation
1. Drain beets and corn.
2. In a bowl, mix together corn kernels, green onions, red pepper, jalapeno and Canola oil.
3. In a bowl, mix together orange juice, lime juice, orange zest, lime zest, cider vinegar, ground cumin, chopped cilantro, salt and sugar.
4. Add corn mixture and refrigerate for 30 minutes to allow the flavours to develop.
5. Add corn mixture to the beets and serve very fresh.
