Ingredients

  • 1.5 kg Arctic Gardens Sliced Beets
  • 750 g Oranges, peeled and cut into segments
  • 750 g Fennel, finely chopped
  • 2 Bunches of chives, chopped
  • Salt to taste
  • Ground black pepper to taste
  • 180 ml Extra virgin olive oil
  • 60 ml Red wine vinegar

Preparation

  • In a large container, mix all ingredients together. Season to taste and serve immediately.

 

  • Chef’s comments
  • If salad must be prepared in advance, add fennel and chive at the last minute to keep chives fresh and fennel crispy. Fennel may be sliced in advance and kept in cold water.
