Ingredients

1⁄2 cup (125ml) olive oil
10 cloves of garlic, chopped
10 cups (2500ml) Arctic Gardens Spaghetti Mix
5 English cucumbers, peeled and diced
1 kg of diced tomatoes
15-20 basil leaves
5 limes, juice
2 lemons, juice
5 tsp (25ml) sambel oelek
5 tsp (25ml) sugar
5 liters (20 cups) tomato juice reduced in salt
Salt & pepper to taste

Suggested garnishes
Lemon wedges
Celery salt
Celery stalks
Olives

Preparation

1. In a large saucepan, heat olive oil over medium heat and sauté garlic lightly for 1 to 2 minutes.
2. Add Arctic Gardens Spaghetti Mix and cook over medium-low heat until heated through, about 5 minutes. Let cool.
4. Transfer to a blender, add all remaining ingredients and blend until smooth.
5. Refrigerate for at least 1 hour or until cold.
6. Using the lemon wedge, moisten the rim of the cups or glasses and coat with celery salt.
7. Pour the chilled soup into the cups, add a small stalk of celery, a few olives on a stick and a lemon wedge.
