Ingredients

1 can of 2.84 L (2 kg) Arctic Gardens Diced Beets

1/4 cup (60 ml) usalted butter

1 cup (250 ml) onions, chopped

2 cups (500 ml) carrots, diced

4 cups (1 L) chicken stock

1 tsp (5 ml) honey

4 tsp (20 ml) red wine vinegar

1 tsp (5 ml) sea salt

1/4 tsp (1.2 ml) ground black pepper

1/3 cup (85 ml) sour cream

4 stalks fresh dill

This recipe can also be done with Arctic Gardens Diced Beets - No Salt Added .

Preparation

1. Set aside 2 cups (500 ml) of cubed beets and drain. 

2. In a pan, melt the butter. Add onions and sweat for 2 minutes. 

3. Add the remaining beets and their juice. 

4. Pour beets and onions into a blender and process until smooth. 

5. Add chicken stock and simmer for 30 minutes (Honey + Vinegar). Season.

6. Add drained cubed beets and diced carrots. 

7. Let simmer for 5 minutes. Correct seasoning. 

8. Serve hot or cold in bowls. 

9. Garnish with sour cream and chopped dill.
