Braised Beef with Star Anise

Ingredients
2 tbsp (30 mL) canola oil
2 kg beef cubes
1/2 cup (125 mL)
diced Arctic Gardens onions
1/2 tbsp (7.5mL) minced garlic
2 cups (500mL) veal stock
1/2 cup (125mL) crushed tomatoes
1 tbsp (15 mL) brown sugar
1/2 tbsp (7.5mL) grated fresh ginger
1/2 tbsp (7.5mL) fresh thyme
2 bay leaves
5 units star anise
1 bag

Preparation
1. In a Dutch oven, heat half the oil and brown the beef cubes. Remove from the Dutch oven, set aside and keep warm.
2. Heat the remaining oil in the same Dutch oven and sweat the onions and garlic for 3 minutes. Add the veal stock, crushed tomatoes, brown sugar, ginger and spices. Season with salt and pepper to taste.
3. Add the beef cubes and bring to a boil. Reduce the heat to low and cook for 1 hour and 30 minutes or until tender.
4. Preheat combi oven to 450°F (230°C) - 100% H. On a lightly oiled baking sheet, spread the stew or fall blend, season with salt and pepper to taste and bake for 8 minutes*.
5. On a serving plate, place a serving of meat on top of a serving of vegetables and pour some of the cooking liquids over top.
* If using a conventional oven, adjust cooking time accordingly.
