Cantonese-style cauliflower rice

Ingredients
9 cups (1.2 kg)
Arctic Gardens Mixed vegetables
3/4 cup (187.5 mL) sesame oil
1 bunch green onions, chopped, white and green separated
3 cups (360g) diced ham
2 1/4 bags (4.5 kg)
Arctic Gardens cauliflower rice
2 cups (500 mL) soy sauce
1 1/2 cups (375 mL) oyster sauce
1/3 cup (90 mL) cornstarch
24 eggs
Preparation
1. Preheat combi oven to 212°F / 100% humidity.
2. Cook macedonia for 5-6 minutes, set aside.
3. Cook cauliflower rice 3-4 minutes, set aside.
4. Heat oil in a wok over medium-high heat.
5. Add diced ham and white pieces of green onion, sauté 2-3 min until lightly colored.
6. Add cauliflower rice. Mix soy sauce and oyster sauce with starch, then pour over cauliflower rice and mix well.
6. Beat eggs in a bowl. Push the cauliflower rice up the sides of the wok to create a well and pour the egg into the center. Cook for 1 minute, stirring like scrambled eggs.
7. Add the mixed vegetables and mix well.
8. Garnish with the remaining green onions and serve.
