Cauliflower and Chickpea Soup with Turmeric

Ingredients
- 30 ml (2 tbsp) of Canola oil
- 100 g (½ cup) of Arctic Gardens Diced Onions
- 100 g (½ cup) of Arctic Gardens Diced Celery
- 50 g (¼ cup) of garlic, chopped
- 7 L (28 cups) of water
- 500 g (2 cups) of Arctic Gardens Diced Potatoes
- 100 g (½ cup) of chicken stock
- 2.85 L (11½ cups) of Arctic Gardens Chickpeas , drained
- 2 kg (8 cups) of Arctic Gardens Caulifower
- 30 g (2 tbsp) of ground turmeric
- To taste: salt and ground black pepper
Preparation
- In a pot, sweat chopped onions, celery and garlic in oil for 2 minutes.
- Add water, potatoes, chicken stock, turmeric, salt and pepper.
- Bring to a boil and add chickpeas and caulifower. Reduce heat to medium and simmer for 30 to 45 minutes.
- Serve in a bowl and sprinkle with parsley.
