Cheesy Kimchi Fried Rice with Crispy Spam

Ingredients

1.7 kg Diced Spam
1 1/2 cup (375 mL) Gochujang
1.4 kg. Drained and Choppped Kimchi (reserve the liquid)
20 Sliced Scallions (keep the greens and whites separate)
20 cups (2.8 kg) Arctic Gardens Rice Pilaf
1 1/4 (312.5 mL) cup Soy Sauce - low sodium
1 1/4 cup (312.5 mL) Kimchi liquid
2 tbsp (30 mL) Sesame Oil
1/3 cup (82.5 mL) Unsalted Butter t
2 1/3 cup (582.5 mL) Shredded Sharp Cheddar Cheese
2 1/3 cup (582.5 mL) Shredded Low Moisture Mozzarella Cheese

Preparation

1. Fry the spam on medium/high heat until crispy.
2. Remove the crispy spam from the pan placing onto a paper towel to retain it’s crispness.
3. Add the gochujang, kimchi and the sliced white scallion into the rendered fat from the spam and cook on medium/low for 7 minutes while occasionally stirring
4. Increase the heat to high and add the Arctic Gardens Rice Pilaf to the pan gently stirring it, thoroughly combining the the kimchi mixture with the rice
5. Once the rice is hot, add the soy sauce, kimchi liquid, butter, sesame oil and spam- remove from the heat
6. Spoon half the rice into an oven safe serving dish and top with the shredded cheese. Spoon the remaining rice into the dish and top with the remaining cheese
7. Place the dish in a 400° oven and bake until the cheese is just melted (about 3 minutes).
Garnish with the scallions greens before serving.
