Ingredients

  • 2 kg boneless, skinless chicken breast or thighs, cut into pieces
  • 2 1/2 cups (625 mL) Arctic Gardens diced onion
  • 1 tablespoon (15 mL) garlic, minced
  • 1 bag (2 kg) Arctic Gardens Carrot duo
  • 1 kg potatoes, cut into large cubes
  • 7 1/2 cups (1875 mL) chicken broth
  • 2/3 cup (150 mL) herbes de Provence
  • Salt and pepper to taste

Preparation

  1. Heat the oil in a large pot, brown the chicken on each side, then set aside.
  2. Sweat the onions and garlic in the same pot.
  3. Return the chicken to the pot and add all the other ingredients.
  4. Bring to a boil, then simmer for 30-45 minutes or until the vegetables are tender.
  5. Adjust the seasoning to taste and serve.
