Chicken and carrots stew

Ingredients
- 2 kg boneless, skinless chicken breast or thighs, cut into pieces
- 2 1/2 cups (625 mL) Arctic Gardens diced onion
- 1 tablespoon (15 mL) garlic, minced
- 1 bag (2 kg) Arctic Gardens Carrot duo
- 1 kg potatoes, cut into large cubes
- 7 1/2 cups (1875 mL) chicken broth
- 2/3 cup (150 mL) herbes de Provence
- Salt and pepper to taste
Preparation
- Heat the oil in a large pot, brown the chicken on each side, then set aside.
- Sweat the onions and garlic in the same pot.
- Return the chicken to the pot and add all the other ingredients.
- Bring to a boil, then simmer for 30-45 minutes or until the vegetables are tender.
- Adjust the seasoning to taste and serve.
