Chickpea, apple, and pecan salad

Ingredients
- One 2.84 L (1.5 kg) can Arctic Gardens Chickpeas , drained
- 5 cups (600 g) Diced apples
- 3 cups (400 g) Diced celery
- 5 cups (600 g) Diced cucumber
- 1 cup (120 g) Minced green onions
- 2½ cups (300 g) Raisins
- 2½ cups (200 g) Pecans or walnuts
- Dressing
- 1 cup (50 ml) Honey
- 5 tbsp. (75 ml) Lemon juice
- 1 cup (250 ml) Olive oil
- 5 tsp. (10 g) Ground cardamom
- 5 tbsp. (40 g) Minced fresh mint
Preparation
1. Place all salad ingredients in a large bowl and add dressing. Toss well.
2. Serve cold.
