Chickpea Salad Sandwich

Ingredients
4 cans (540 ml)
ARCTIC GARDENS chickpeas
, rinsed and drained
5-7 stalks celery, finely diced
10-15 medium dill pickles (¼ to ½ cup depending on your taste), diced
3/4 cup (180ml) finely chopped red onions
1 cup (240ml) finely chopped dill
1/3 cup (75ml) finely chopped parsley
Seasoned mayonnaise
4-5 cloves of garlic
1 cup (240ml) mayonnaise
¾ cup (180ml) prepared mustard
2 lemons: juice and zest
¼ cup (60ml) curry powder, to taste
salt and pepper to taste
Preparation
1. In a large bowl, mash chickpeas with a fork until flaky or until desired consistency.
2. Stir in celery, red onions, pickles and herbs (dill and parsley). Mix well. Set aside.
3. In a separate bowl, combine all ingredients for the seasoned mayonnaise.
4. Add mayonnaise to chickpea and vegetable mixture, mix well. Adjust seasoning as needed.
Serve in a sandwich, on crackers, in a tortilla or on a lettuce salad.
