Ingredients

  • 1 bag (2 kg) Arctic Gardens Bistro Blend
  • 1/2 cup (125 ml) Canola oil
  • 22 lbs (10 kg) Pork loin
  • 3 tbsp (45 ml) Garlic, finely chopped
  • 4 cups (1 L) Onions, chopped
  • 4 cups (1 L) Orange juice
  • 1/4 cup (60 ml) Lime juice
  • 1 cup (250 ml) Lemon juice
  • 2 cups (500 ml) Honey
  • 36 cups (9 L) Stock
  • 1 tbsp (15 ml) Salt
  • 1 tbsp (15 ml) Ground black pepper

Preparation

  1. In a braising pan, heat oil. Season the pork loins with salt and pepper on all sides. Remove the meat and drain the fat from the pan.
  2. In the same braising pan, sweat the onions and garlic for 2 minutes. Add the honey.
  3. Deglaze the pan with the citrus juices. Reduce by half. Add the stock and pork loins. Season and cook, covered, for about 1 hour and 30 minutes.
  4. Remove the pork loin and strain the cooked juice through a sieve. Set aside.
  5. Cook the Bistro Blend in boiling water or steam for 4 minutes. Drain and set aside.
  6. In the centre of a plate, arrange the vegetables. Place one slice of the pork (about 175 g) onto the vegetables and spoon the cooked juice over it.
