Corn Salsa

Ingredients
2 1/2 cups (625 mL)
Arctic Gardens Super Sweet Corn
2 cups (500 mL) diced cucumber
2 cups (500 mL) diced tomatoes
1 cup (250 mL) diced red pepper
2 tbsp (30 mL) finely chopped jalapenos
1/3 cup (80 mL) fresh lime juice
1/4 cup (60 mL) canola oil
2 cups (500 mL) chopped green onions
1 tbsp (15 mL) minced garlic
2 tbsp (30 mL) finely chopped fresh cilantro
1 tsp (5 mL) Tabasco
1 tsp (5 mL) cumin powder
Salt and pepper to taste
Preparation
1. Cook for 5 min in combi oven at 212°F (100°C) / 100% humidity then cool.
2. In a large bowl, mix all ingredients together.
3. Set aside in the refrigerator for 30 minutes to let the flavors develop before serving.
