Cream Soup with Vegetables, Chicken and Shrimp

Ingredients
- 540 g of onions, chopped
- 150 ml of vegetable oil
- 800 g of rice
- 6 L of low sodium chicken stock
- To taste: salt and pepper
- 2 kg of Arctic Gardens Mixed Vegetables (4)
- 400 ml of 15% heavy cream
- 1 kg of chicken legs, cubed
- 1 kg of northern shrimp
- 1 small bunch of cilantro, chopped
- 100 g of lime juice
Preparation
- Sweat the onions in the oil. Add the chicken stock and bring to a boil.
- Add the rice and season.
- When the rice is half-cooked, add the chicken.
- Wait until the soup comes back to a boil, and then add the vegetable mix and the cream. Continue cooking.
- Just before serving, garnish with shrimp, cilantro and lime juice.
