Ingredients

  • 90 salmon filets (125 g each)
  • 450 g of panko bread crumbs

Broccoli stuffing

  • 2.5 kg of Bonduelle Broccoli Purée , thawed
  • 5 meduim eggs
  • 150 ml of fresh tarragon, chopped
  • 150 ml of fresh chives, chopped
  • 150 ml of flat-leaf parsley, chopped
  • 6 ml of salt
  • 3 ml of ground black pepper

Preparation

 

  1. In a bowl, mix broccoli stuffing ingredients together. Set aside.
  2. Place filets of salmon on baking sheets lined with parchment paper.
  3. Take the stuffing and spread it all over the filets of salmon (about 60 g of stuffing per filet).
  4. Sprinkle with bread crumbs.
  5. Bake in an oven preheated to 180° C (350° F) for about 8 minutes or until the fish is done.

The salmon may be substituted with another variety of fish depending on market availability.
