Filet of Salmon with Spice and Herbed Broccoli En Croute

Ingredients
- 90 salmon filets (125 g each)
- 450 g of panko bread crumbs
Broccoli stuffing
- 2.5 kg of Bonduelle Broccoli Purée , thawed
- 5 meduim eggs
- 150 ml of fresh tarragon, chopped
- 150 ml of fresh chives, chopped
- 150 ml of flat-leaf parsley, chopped
- 6 ml of salt
- 3 ml of ground black pepper
Preparation
- In a bowl, mix broccoli stuffing ingredients together. Set aside.
- Place filets of salmon on baking sheets lined with parchment paper.
- Take the stuffing and spread it all over the filets of salmon (about 60 g of stuffing per filet).
- Sprinkle with bread crumbs.
- Bake in an oven preheated to 180° C (350° F) for about 8 minutes or until the fish is done.

The salmon may be substituted with another variety of fish depending on market availability.
