Fried rice with chicken & vegetables

Ingredients
- 1 1/2 bags (3 kg) Arctic Gardens Perfectly Imperfect Vegetable Blend
- 2/3 cup (150 mL) sesame oil
- 8-10 green onions, chopped, whites and greens separated
- 1.5 kg cooked chicken, diced
- 20 cups (5 L) cooked white rice (about 5 cups dry rice)
- 1 2/3 cups (400 mL) soy sauce
- 1 1/4 cups (310 mL) oyster sauce
- 1/3 cup (75 mL) cornstarch
- 20 eggs
Preparation
- Preheat the combi oven to steam mode at 212°F / 100% humidity. Cook the vegetable blend for 4-5 minutes.
- Heat the oil in a large wok over medium-high heat.
- Add the diced chicken, white parts of the green onions, and vegetables, and sauté for 2-3 minutes until lightly browned.
- Add the rice. Mix the soy sauce and oyster sauce with the cornstarch, then pour over the rice and mix well.
- Beat the eggs in a bowl. Push the rice to the sides of the wok to create a well and pour the eggs into the center. Cook for 1 minute, stirring like scrambled eggs.
- Garnish with the remaining green onions and serve.
