Ingredients

  • 1 1/2 bags (3 kg) Arctic Gardens Perfectly Imperfect Vegetable Blend
  • 2/3 cup (150 mL) sesame oil
  • 8-10 green onions, chopped, whites and greens separated
  • 1.5 kg cooked chicken, diced
  • 20 cups (5 L) cooked white rice (about 5 cups dry rice)
  • 1 2/3 cups (400 mL) soy sauce
  • 1 1/4 cups (310 mL) oyster sauce
  • 1/3 cup (75 mL) cornstarch
  • 20 eggs

Preparation

  1. Preheat the combi oven to steam mode at 212°F / 100% humidity. Cook the vegetable blend for 4-5 minutes.
  2. Heat the oil in a large wok over medium-high heat.
  3. Add the diced chicken, white parts of the green onions, and vegetables, and sauté for 2-3 minutes until lightly browned.
  4. Add the rice. Mix the soy sauce and oyster sauce with the cornstarch, then pour over the rice and mix well.
  5. Beat the eggs in a bowl. Push the rice to the sides of the wok to create a well and pour the eggs into the center. Cook for 1 minute, stirring like scrambled eggs.
  6. Garnish with the remaining green onions and serve.
