Fusion Salad with Miso Ginger Dressing

Ingredients
- 1 bag (2 kg) of Arctic Gardens Fusion Blend
- 1 L ( 4 cups) of cherry tomatoes, cut in half
- 1 L (4 cups) of red peppers, diced
- 500 ml (2 cups) of red onions, diced
- 230 ml (1 1/3 cup) of fresh parsley, chopped
- 230 ml (1 1/3 cup) of fresh cilantro, chopped
Dressing:
- 80 ml (1/3 cup) of rice vinegar
- 125 ml (1/2 cup) of olive oil
- 45 ml (3 tbsp) of sesame oil
- about 25 ml (1 1/2 tbsp) of honey
- about 25 ml (1 1/2 tbsp) of Miso paste
- about 25 ml (1/2 tbsp) of soya sauce
- 60 ml (4 tbsp) of ginger
- 30 ml (2 tbsp) of fresh garlic
Preparation
- Cook the Fusion vegetable blend according to the cooking instructions on the package. Set aside.
- In a bowl, add the tomatoes, peppers, onions, parsley, and cilantro.
- Incorporate to the Fusion blend vegetables.
- Using a food processor, mix all the dressing ingredients together until the texture is smooth and creamy.
- Pour the dressing over the vegetables and mix well.
- Serve immediately or keep refrigerated.
