Ingredients

  • 1 bag (2 kg) Arctic Gardens Parisian Mix
  • 1 cup (250 ml) Red onions, finely chopped
  • 1 tbsp (15 ml) Garlic, finely chopped
  • 1 cup (250 ml) Feta cheese, cubed
  • 1/2 cup (125 ml) Kalamata olives, pitted
  • 1 tbsp (15 ml) Dried oregano
  • 1 tsp (5 ml) Salt
  • 1/2 tsp (2.5 ml) Ground black pepper
  • 1/2 cup (125 ml) Olive oil
  • 2 tbsp (30 ml) Sherry vinegar

Preparation

  1. Boil or steam the Parisian mix for 5 minutes.
  2. In a large bowl, mix together the remaining ingredients.
  3. Cover with transparent plastic wrap and put in the fridge for 30 minutes in order to allow the flavours to develop.
  4. Add the Parisian mix.
  5. Serve cold.
