Greek Salad with Tomato, Olives and Feta

Ingredients
- 1 bag (2 kg) Arctic Gardens Parisian Mix
- 1 cup (250 ml) Red onions, finely chopped
- 1 tbsp (15 ml) Garlic, finely chopped
- 1 cup (250 ml) Feta cheese, cubed
- 1/2 cup (125 ml) Kalamata olives, pitted
- 1 tbsp (15 ml) Dried oregano
- 1 tsp (5 ml) Salt
- 1/2 tsp (2.5 ml) Ground black pepper
- 1/2 cup (125 ml) Olive oil
- 2 tbsp (30 ml) Sherry vinegar
Preparation
- Boil or steam the Parisian mix for 5 minutes.
- In a large bowl, mix together the remaining ingredients.
- Cover with transparent plastic wrap and put in the fridge for 30 minutes in order to allow the flavours to develop.
- Add the Parisian mix.
- Serve cold.
