Greek Black Bean Salad

Ingredients
- 3 medium onions, diced
- 5 medium tomatoes, diced
- 300 g of feta cheese, cubed
- 2,84 L (100 oz) Arctic Gardens Black Turtle Beans , drained and rinsed
- 50 ml of olive oil
- 25 ml of lemon juice
- 150 ml of fresh parsley, chopped
- Oregano, dried
- 2 ml of salt
- 1 ml of pepper
This recipe can also be done with Arctic Gardens Black Beans 24 x 540ml .
Preparation
- In a bowl, mix onions, tomato, cheese, black beans, olive oil, lemon juice, vinegar, oregano, salt and pepper.
- Cover and refrigerate for one hour.
- Garnish with cheese and parsley.
