Green Beans with Tarragon Butter and Citrus Zest

Ingredients
- 2 kg (8 cups) of Arctic Gardens Extra Fine Green Beans
Tarragon butter
- 454 g (16 oz) of unsalted butter, creamed
- 7 g (1½ tsp) of dried tarragon
- 2 (zest and juice) of lime
- 1 (zest and juice) of orange
- 1 (zest and juice) of lemon
- Salt and ground black pepper to taste
This recipe can also be done with the Eco-V Whole Green Beans .
Preparation
- In a mixing bowl, mix together butter, tarragon, zest and juice of all citrus fruits.
- Mix well until flavoured butter is smooth and creamy.
- Spread flavoured butter onto a sheet of parchment paper and roll into a log about 4 cm (1½ inch) in diameter. Store in the fridge.
- Steam or boil frozen green beans in boiling salted water for 4 to 5 minutes.
- In a frying pan, melt flavoured butter and sauté hot, cooked green beans. Add salt and pepper.
Ratio of flavoured butter for 25 servings of 80 g of vegetables = 18 g
