Green Beans with Tarragon Butter and Citrus Zest

Tarragon butter

  • 454 g (16 oz) of unsalted butter, creamed
  • 7 g (1½ tsp) of dried tarragon
  • 2 (zest and juice) of lime
  • 1 (zest and juice) of orange
  • 1 (zest and juice) of lemon
  • Salt and ground black pepper to taste

This recipe can also be done with the Eco-V Whole Green Beans .

Preparation

  1. In a mixing bowl, mix together butter, tarragon, zest and juice of all citrus fruits.
  2. Mix well until flavoured butter is smooth and creamy.
  3. Spread flavoured butter onto a sheet of parchment paper and roll into a log about 4 cm (1½ inch) in diameter. Store in the fridge.
  4. Steam or boil frozen green beans in boiling salted water for 4 to 5 minutes.
  5. In a frying pan, melt flavoured butter and sauté hot, cooked green beans. Add salt and pepper.
