Green beans, fennel and citrus salad

Ingredients
2,5 kg (2 1/2 bags) of
Arctic Gardens Extra Fine Whole Green Beans 1kg
150 ml (2/3 cup) lemon juice
60 ml (1/4 cup) Dijon mustard
250 ml (1 cup) canola oil
5 french shallots, finely diced
25 ml (5 tsp) herbes de Provence ou herbes à l’italienne
2,5 L (10 cups) fennel or aniseed bulb, finely chopped
5 pink grapefruits, cut into segments
10 clementines, peeled and separated into segments
Salt and freshly ground pepper
To taste, spring mix lettuce - optional
5 avocados, sliced
Preparation
1. In a saucepan, bring salted water to a boil and cook the green beans for 5 minutes.
2. Meanwhile, in a large bowl, whisk together lemon juice, mustard and oil. Add shallots and herbs.
3. Drain the green beans and leave in the sieve for 2 minutes before transferring to the bowl.
4. Add fennel, grapefruit and clementines. Stir gently and season to taste.
5. Serve on lettuce if desired and garnish with avocado.
