Grilled Vegetable Tian

Ingredients
- 1.8 L (7 cups) of Arctic Gardens Diced Onions
- 125 ml (1/2 cup) of Extra virgin olive oil
- 1.5 L (6 cups) of Arctic Gardens Grilled Eggplant
- 1.5 L (6 cups) of Arctic Gardens Grilled Zucchini
- 1.5 L (6 cups) of Arctic Gardens Grilled Peppers
- 6 fresh tomatoes, sliced
- 125 ml (1/2 cup) of olive oil
- 15 ml (1/4 tbsp) fresh thyme to taste
- 125 ml (1/2 cup) of bread crumbs
- 5 ml (1 tbsp) os salt
- 1.5 ml (1/4 tbsp) of black pepper
This recipe can also be done with the Arctic Gardens Grilled Trio .
Preparation
- Sauté onions in olive oil until nicely browned.
- In a 2” casserole dish, arrange onions evenly.
- Thaw and drain vegetables. Squeeze excess water from zucchini.
- Arrange and slightly overlap vegetables in rows.
- Season. Sprinkle with bread crumbs. Drizzle with olive oil and sprinkle with thyme.
- Bake in the oven at 180° C for about 30 minutes.
Chef’s comments:
Peppers can be rolled up for a more delicate presentation. Quantity must be, therefore, increased by 25 %.
