Hot Turkey Sandwich with Brown Tarragon Sauce

Ingredients
- 1 can (2,84 L) Arctic Gardens Peas #3
- 6 kg Cooked turkey meat, boneless and fat removed
- 100 slices Whole wheat bread
Tarragon sauce
- 750 ml (3 cups) Red cooking wine
- 170 ml (2/3 cup) Fresh tarragon
- 3 L (12 cups) Commercial demi-glace sauce
- 1 tbsp (15 ml) Salt
- 1 tbsp (15 ml) Ground black pepper
This recipe can also be done with the Arctic Gardens Assorted Peas .
Preparation
- In a pot, pour in the red wine and add the tarragon. Reduce to half.
- Add the demi-glace sauce and simmer for 2 minutes. Add salt and pepper.
- Cut out circles from the slices of bread. Cut pieces as large as possible to minimize waste.
- Reheat the turkey and steam the peas separately.
- On a serving plate, place a portion of turkey onto a slice (circle) of bread. Cover with a second slice of bread and pour 3 tbsp (45 ml) of gravy. Add 2 tbps (30 g) of peas on top of the sandwich.
- Serve hot.
