Indian style roasted cauliflower bites with tahini and cilantro sauce

Ingredients

  • 5 kg Arctic Gardens Cauliflower Florets (frozen)
  • 2/3 c (150 ml) olive oil
  • 2 tsp (10 ml) ground cumin
  • 3 tbsp (45 ml) Garam masala
  • 1 tsp (5 ml) cayenne pepper, to taste
  • Salt and pepper to taste

Tahini and cilantro

  • 5 c (1,250 ml) plain yogurt
  • 1 c + 2 tbsp (280 ml) tahini (sesame paste)
  • 1 c + 2 tbsp (280 ml) fresh cilantro, to taste
  • 1/3 c (150 ml) lemon juice
  • 2 tbsp (30 ml) garlic, chopped
  • Salt and pepper to taste

Preparation

  1. In a bowl, combine frozen cauliflower, oil and spices (pre-mixed). Season with salt and pepper to taste and mix well.
  2. Spread the cauliflower onto baking sheets (don't crowd them). 
  3. Roast on high (450 °F) for 30 minutes or until cauliflower is golden brown, turning after 15 minutes.
  4.  Meanwhile, prepare the sauce. In a blender, puree sauce ingredients until smooth. Set aside. 
  5. Serve the roasted cauliflower bites with the yogurt sauce.
