Indian style roasted cauliflower bites with tahini and cilantro sauce
Ingredients
- 5 kg Arctic Gardens Cauliflower Florets (frozen)
- 2/3 c (150 ml) olive oil
- 2 tsp (10 ml) ground cumin
- 3 tbsp (45 ml) Garam masala
- 1 tsp (5 ml) cayenne pepper, to taste
- Salt and pepper to taste
Tahini and cilantro
- 5 c (1,250 ml) plain yogurt
- 1 c + 2 tbsp (280 ml) tahini (sesame paste)
- 1 c + 2 tbsp (280 ml) fresh cilantro, to taste
- 1/3 c (150 ml) lemon juice
- 2 tbsp (30 ml) garlic, chopped
- Salt and pepper to taste
Preparation
- In a bowl, combine frozen cauliflower, oil and spices (pre-mixed). Season with salt and pepper to taste and mix well.
- Spread the cauliflower onto baking sheets (don't crowd them).
- Roast on high (450 °F) for 30 minutes or until cauliflower is golden brown, turning after 15 minutes.
- Meanwhile, prepare the sauce. In a blender, puree sauce ingredients until smooth. Set aside.
- Serve the roasted cauliflower bites with the yogurt sauce.
