Indian vegetable stew

Ingredients
- ½ cup (125 g) Canola oil
- 2½ cups (300 g) Chopped onion
- ¼ cup (40 g) Chopped fresh garlic
- ¼ cup (50 g) Chopped fresh ginger
- 5 tbsp. (25 g) Garam masala
- 2 tbsp. (15 g) Curry powder
- Three 680 ml cans (2 L) Store-bought tomato sauce
- 1 cup (250 ml) Plain yogurt (0% M.F.)
- 1 bag (2 kg) Arctic Gardens Stew Mix
Preparation
- Heat canola oil in a saucepan.
- Add onion, garlic, and ginger and sauté for 1 minute; do not let ingredients turn brown.
- Add vegetable mix, spices, and tomato sauce.
- Simmer over low heat for 15 minutes.
- Add plain yogurt, bring to a boil, and serve.
- Pair with basmati rice and lentils.
