Ingredients

  • 2,84 L (100 oz) of Arctic Gardens Chickpeas , drained and rinsed
  • 12 green onions, finely chopped
  • 25 cherry tomatoes, quartered
  • 1 medium red onion, chopped
  • 375 ml of black olives, pitted
  • 60 ml of capers, drained
  • 65 ml of parsley, chopped
  • 65 ml of fresh mint, finely chopped

Dressing

  • 375 ml of olive oil
  • 225 ml of wine vinegar
  • 2 ml of salt
  • 1 ml of pepper

Preparation

  1. In a salad bowl, toss all salad ingredients together.
  2. In another bowl, mix oil and vinegar. Add salt and pepper.
  3. Pour salad dressing onto salad. Toss well.
  4. Refrigerate for 30 minutes. Serve
