Ingredients

  • 1 medium egg, beaten
  • 125 ml (½ cup) of Canola vegetable oil
  • 250 ml (1 cup) of Arctic Gardens Lentils , drained and pureed
  • 250 ml (1 cup) of apple pie filling
  • 190 ml (¾ cup) of whole wheat flour
  • 190 ml (¾ cup) of all-purpose flour
  • 80 ml (⅓ cup) of brown sugar
  • 10 ml (2 tsp) of baking powder
  • 5 ml (1 tsp) of baking soda
  • 5 ml (1 tsp) of ground cinnamon
  • 1.2 ml (1 pinch) of ground nutmeg

Preparation

  1. Preheat oven to 400° F.
  2. Mix together egg, oil, lentil puree, and apple filling.
  3. Add the dry ingredients and stir to make a batter.
  4. Fill medium muffin tins ⅔ full.
  5. Bake for about 15 minutes or until muffins are golden and bounce back when lightly pressed with fingertips.
