Lentil and Apple Muffin

Ingredients
- 1 medium egg, beaten
- 125 ml (½ cup) of Canola vegetable oil
- 250 ml (1 cup) of Arctic Gardens Lentils , drained and pureed
- 250 ml (1 cup) of apple pie filling
- 190 ml (¾ cup) of whole wheat flour
- 190 ml (¾ cup) of all-purpose flour
- 80 ml (⅓ cup) of brown sugar
- 10 ml (2 tsp) of baking powder
- 5 ml (1 tsp) of baking soda
- 5 ml (1 tsp) of ground cinnamon
- 1.2 ml (1 pinch) of ground nutmeg
Preparation
- Preheat oven to 400° F.
- Mix together egg, oil, lentil puree, and apple filling.
- Add the dry ingredients and stir to make a batter.
- Fill medium muffin tins ⅔ full.
- Bake for about 15 minutes or until muffins are golden and bounce back when lightly pressed with fingertips.
