Lentil and Bran Muffin

Ingredients
- 1 cup of 2% milk
- 2 cups of All Bran cereal
- 1 ½ cups of all-purpose flour
- 1 cup of whole wheat flour
- 1 tbsp of baking soda
- 1 ½ tsp of salt
- ½ cup of Canola oil
- 1 cup of sugar
- 2 medium eggs
- ½ cup of chopped dates or dried raisins
- 2 ½ cups of Arctic Gardens Lentils , pureed
Preparation
- Preheat oven at 350°F.
- Pour the milk on the cereal and leave to soak.
- In a medium size bowl, mix flour, baking soda, and salt. Set aside.
- In a large bowl, combine oil, sugar, eggs, and dates. Add, in this order, the lentils, the dry mix, and the cereals. Mix well.
- Fill in muffin cup ¾ full.
- Bake 15 to 20 minutes.
Yields 20 muffins
