Lentil and Chocolate Chips Cookies

Ingredients
- 1 cup of packed brown sugar
- ¾ cup of margarine
- 1 egg
- 7 ml of vanilla
- ¾ cup of Arctic Gardens Lentils , pureed
- 1 ½ cup of all-purpose flour
- 2 ml of salt
- 5 ml of baking soda
- 2 cups of quick oatmeal
- 1 cup of milk chocolate chips
- ¾ cup of chopped pecans
Preparation
- Preheat oven at 350°F.
- In a bowl, cream brown sugar and margarine.
- Add egg and stir well.
- Add lentils and vanilla. Mix well.
- Sift flour with salt and baking soda.
- Add 1/3 of the margarine and brown sugar mix at a time and stir in between.
- Add oatmeal, milk chocolate chips and pecans. Mix together.
- Spoon about 5 ml of cookie dough onto greased baking sheet, spacing 1 inch apart.
- Flatten with a fork.
- Bake 10 to 13 minutes.
