Ingredients

  • 1 cup of packed brown sugar
  • ¾ cup of margarine
  • 1 egg
  • 7 ml of vanilla
  • ¾ cup of Arctic Gardens Lentils , pureed
  • 1 ½ cup of all-purpose flour
  • 2 ml of salt
  • 5 ml of baking soda
  • 2 cups of quick oatmeal
  • 1 cup of milk chocolate chips
  • ¾ cup of chopped pecans

Preparation

  1. Preheat oven at 350°F.
  2. In a bowl, cream brown sugar and margarine.
  3. Add egg and stir well.  
  4. Add lentils and vanilla. Mix well.
  5. Sift flour with salt and baking soda.
  6. Add 1/3 of the margarine and brown sugar mix at a time and stir in between.
  7. Add oatmeal, milk chocolate chips and pecans. Mix together.
  8. Spoon about 5 ml of cookie dough onto greased baking sheet, spacing 1 inch apart. 
  9. Flatten with a fork.
  10. Bake 10 to 13 minutes.
