Macaroni casserole with meat and vegetables

Ingredients
1.8 kg (4 lbs) uncooked macaroni
2.7 kg (6 lbs)
Arctic Gardens California style blend
1.8 kg (4 lbs) ground beef
16 cups (4L) tomato sauce
1/2 to 3/4 cup (120 to 180 mL) basil pesto
Salt and freshly ground pepper to taste
8 cups (2L) grated cheddar cheese
Preparation
1. Preheat oven to 425°F (210°C).
2. In a large saucepan, bring a large quantity of salted water to a boil and cook macaroni according to supplier instructions. Add vegetables 2-3 minutes before end of cooking time. After cooking, drain and set aside.
3. Meanwhile, in a large ovenproof pan, brown the ground beef over high heat.
4. Add tomato sauce and pesto. Season to taste.
5. Add cooked macaroni and vegetables. Stir to combine.
6. Cover with grated cheese and bake until golden.
