Maple Glazed Carrots, Lime and Cilantro

Ingredients
- 1 bag (2 kg) Arctic Gardens Whole Baby Carrots
- 1/2 cup (125 ml) Unsalted butter
- 3/4 cup (190 ml) Maple syrup
- 3 tbsp (45 ml) Lime juice
- 3 tbsp (45 ml) Lime zest
- 3 tbsp (45 ml) Chopped cilantro
- 1 tsp (5 ml) Salt
- 1/2 tsp (2.5 ml) Ground black pepper
Preparation
- Boil or steam carrots for 3 to 5 minutes.
- In a frying pan, melt the butter, add maple syrup and lime juice. Cook for about 1 minute or until syrupy consistency is obtained.
- Add carrots, lime zest, cilantro, salt and pepper. Cook for 5 minutes stirring frequently until the carrots are glazed.
- Serve immediately.
