Maple Glazed Carrots, Lime and Cilantro

Ingredients

  • 1 bag (2 kg) Arctic Gardens Whole Baby Carrots
  • 1/2 cup (125 ml) Unsalted butter
  • 3/4 cup (190 ml) Maple syrup
  • 3 tbsp (45 ml) Lime juice
  • 3 tbsp (45 ml) Lime zest
  • 3 tbsp (45 ml) Chopped cilantro
  • 1 tsp (5 ml) Salt
  • 1/2 tsp (2.5 ml) Ground black pepper

Preparation

  1. Boil or steam carrots for 3 to 5 minutes.
  2. In a frying pan, melt the butter, add maple syrup and lime juice. Cook for about 1 minute or until syrupy consistency is obtained.
  3. Add carrots, lime zest, cilantro, salt and pepper. Cook for 5 minutes stirring frequently until the carrots are glazed.
  4. Serve immediately.
