Mediterranean Roasted Root Vegetables

Ingredients
1/3 cup (100 mL) canola or olive oil
2 bags
Arctic Gardens Stew Mix
or
Arctic Gardens Fall Medley
2 tbsp (30g) minced garlic
1/2 tsp (2g) cayenne pepper, crushed
1 tsp (2g) thyme
1 1/2 tsp (7g) rosemary, whole
Salt and pepper to tast
Preparation
1. Preheat oven to 400°F (200°C).
2. In a large bowl, combine vegetables, oil, garlic and spices.
3. Spread vegetables on baking sheets and bake for 20 minutes*.
4. Using a spatula, turn the vegetables during cooking to obtain a golden color and a roasted appearance.
* If you choose to use a combi oven, remember to adjust the cooking time accordingly.
