Mexican Bean Salad

Ingredients
- 2 x 540 ml (19 oz) of Arctic Gardens Black Beans , drained and rinsed
- 2 x 540 ml (19 oz) of Arctic Gardens Navy Beans , drained and rinsed
- 3 medium red onions, diced
- 3 medium red peppers, diced
- 1 L of Arctic Gardens Whole Kernel Corn , drained
- 65 ml of fresh cilantro, chopped
- 10 ml of Dijon mustard
- 300 ml of olive oil
- 10 ml of ground cumin
- 4 cloves of garlic, finely chopped
- 6 ml of salt
- 2 ml of pepper
This recipe can also be done with Arctic Gardens Black Beans 2.84L and Arctic Gardens Navy Beans 2.84L .
Preparation
- In a bowl, mix together beans, onions, peppers, corn, and cilantro.
- In another bowl, dilute mustard with wine vinegar. Slowly add oil a little at a time while whisking. Add cumin, garlic, salt, and pepper.
- Pour salad dressing onto salad. Toss well.
- Marinate in fridge for 30 minutes. Serve.
