Ingredients

  • 2 kg (8 cups) of Arctic Gardens Mexican Mix
  • 25 eggs
  • 250 ml (1 cup) of 3.25% milk
  • 250 g (1 cup) of Monterey Jack cheese
  • 7 g (1½ tsp) of chili powder
  • 15 ml (1 tbsp) of canola oil
  • To taste: salt and ground black pepper

Preparation

  1. In a large mixing bowl, whisk together eggs, milk, cheese and seasonings until mixed well.
  2. Spread the frozen Mexican vegetables on a greased (canola oil) baking sheet.
  3. Pour the mixture onto the vegetables and bake in the oven at 180°C / 350°F for 20 minutes.
