Mexican Frittata

Ingredients
- 2 kg (8 cups) of Arctic Gardens Mexican Mix
- 25 eggs
- 250 ml (1 cup) of 3.25% milk
- 250 g (1 cup) of Monterey Jack cheese
- 7 g (1½ tsp) of chili powder
- 15 ml (1 tbsp) of canola oil
- To taste: salt and ground black pepper
Preparation
- In a large mixing bowl, whisk together eggs, milk, cheese and seasonings until mixed well.
- Spread the frozen Mexican vegetables on a greased (canola oil) baking sheet.
- Pour the mixture onto the vegetables and bake in the oven at 180°C / 350°F for 20 minutes.
