This recipe can also be done with the Arctic Gardens Minestrone Mix .

Preparation

  1. Sweat pancetta in olive oil. Add mirepoix and leeks and continue to sweat.
  2. Moisten with water, bring to a boil and season.
  3. In the meantime, cook soybeans and tubettini separately. When soybeans are done, immerse in ice water. Let cool.
  4. Midway through cooking the mirepoix and leeks, add potatoes and zucchini and continue cooking.
  5. Three minutes before done, add remaining vegetables and soybeans.
  6. Finish seasoning.
  7. Serve with tubettini.


Chef’s comments
For best results, add tubettini only when ready to serve. Adding pesto at the last minute can also enhance this recipe.
