Ingredients
- 750 g of Arctic Gardens Mirepoix Mix
- 375 g of Arctic Gardens Diced Leeks
- 100 ml of extra virgin olive oil
- 125 g of pancetta, cut into small cubes
- 3,75 L of water
- 375 g of Arctic Gardens soybeans
- 150 g of tubettini pasta
- 375 g of Arctic Gardens Diced Potatoes
- 375 g of Arctic Gardens Zucchini , quartered
- 375 g of Arctic Gardens Chopped Spinach
- 375 g of Arctic Gardens Dark Red Kidney Beans , rinced and drainedà
- 240 g of chopped canned tomatoes
- To taste: salt and ground black pepper
This recipe can also be done with the Arctic Gardens Minestrone Mix .
Preparation
- Sweat pancetta in olive oil. Add mirepoix and leeks and continue to sweat.
- Moisten with water, bring to a boil and season.
- In the meantime, cook soybeans and tubettini separately. When soybeans are done, immerse in ice water. Let cool.
- Midway through cooking the mirepoix and leeks, add potatoes and zucchini and continue cooking.
- Three minutes before done, add remaining vegetables and soybeans.
- Finish seasoning.
- Serve with tubettini.
Chef’s comments
For best results, add tubettini only when ready to serve. Adding pesto at the last minute can also enhance this recipe.
