Montego blend with crispy garlic and lemon topping

Ingredients
- 1 bag (2kg) Montego Arctic Gardens Mixed Vegetables
- 2 tbsp (30 mL) minced garlic
- 4 lemons, juice and zest
- 1/4 cup (60 mL) olive oil
- Salt, pepper to taste
- 4 tsp (20 mL) thyme
- 1 cup (250 mL) panko breadcrumbs
- 1 cup (250 mL) slivered almonds
Preparation
1. Preheat combi oven in steam mode to 212°F/100% humidity. Cook frozen vegetables for 4 to 5 minutes or until an internal temperature of 165°F is reached.
2. Season vegetables with lemon juice, salt and pepper to taste, mix well and set aside.
3. Heat olive oil in a frying pan. Add garlic, thyme and almonds.
4. When the almonds begin to color, add the panko and cook until golden brown.
5. Remove from the heat and add the lemon zest, adjusting the seasoning to taste.
6. Serve the crispy topping over the vegetables.
