Old Fashioned Salmon Pie

Ingredients
- 3 L (12 cups) of fish stock
- 1.2 kg (6 cups) of fresh salmon, cubed
- 625 ml (1 1/4 cup) of corn starch
- 375 ml (1 1/4 cup) of 15% heavy cream
- 1 bag (2 kg) of Arctic Gardens Old Fashioned Mix
- 15 ml of fresh tarragon, chopped
- 2.5 kg of commercial short pastry
- 1 egg, beaten (for the egg wash)
- 5 ml of salt
- 1 ml of black pepper
Preparation
- Poach the salmon in the stock for about 1 minute. Drain.
- Thicken the stock with the cornstarch.
- Stir until creamy.
- Add the old fashioned vegetable mix and the poached salmon.
- Season and sprinkle with fresh tarragon if desired.
- Line 5 pie plates with the short pastry. Divide the stuffing equally into the plates and cover with another layer of the pastry. Baste with egg wash.
- Place the pies onto the lowest rack and bake in an oven preheated to 180°C (350°F) for 30 minutes.
- Let stand for a few minutes before serving.
