Paella-Style Rice Casserole

Ingredients
- 500 g of pork filet, cubed
- 25 chicken drumsticks
- 500 g of Arctic Gardens Mixed Diced Peppers
- 250 ml of vegetable oil
- 1,75 kg parboiled rice
- 200 g of Arctic Gardens Diced Onions
- 30g of garlic, chopped
- 60 ml of olive oil
- 500 g of fresh tomatoes, chopped
- 900 g of fresh mussels
- 200 ml of dry white wine
- 2,7 L of poultry stock, boiling
- 12 packets of saffron powder
- 500 g of squid, cut into rings
- 500 g of shrimp 21/25
- 500 g of chorizo, chopped
- 250 g of Arctic Gardens Assorted Peas
- To taste: salt and black pepper
Preparation
- Brown the meats and sweet peppers separately.
- Brown onion and garlic in olive oil. Put them in a 4” casserole dish then add the rice.
- Add cooked meats and peppers, as well as tomatoes, mussels, saffron, white wine, and boiling chicken stock.
- Season, mix well, and bake in the oven at 200° C for 15 minutes.
- Add the remaining ingredients. Mix and finish cooking in oven for another 15 minutes or so.
