Parmesan, Rotini and Broccoli Cream Soup

Ingredients
- 1 bag (2 kg) Arctic Gardens Broccoli Bits
- 1/2 cup (125 ml) Unsalted butter
- 2 cups (500 ml) Onion, chopped
- 1 tbsp (15 ml) Garlic, finely chopped
- 1 cup (250 ml) All purpose flour
- 16 cups (4 litres) Chicken stock
- 2 tbsp (30 ml) Dried herbes de Provence
- 1/2 tsp (2.5 ml) Red chili pepper flakes
- 2 tsp (10 ml) Salt
- 1/2 tsp (2.5 ml) Ground black pepper
- 1/2 cup (125 ml) Parmesan cheese, grated
- 3 cups (750 ml) Rotini
- 1 tsp (5 ml) Salt
- 1 cup (250 ml) 35% cream
This recipe can also be done with the Arctic Gardens Chopped Broccoli or Arctic Gardens Broccoli Micro Florets 1x10 kg
Preparation
- In a stock pot, melt the butter, add the onions and garlic and sweat for 3 minutes. Sprinkle the flour into the pot and mix well.
- Add frozen broccoli, chicken stock and seasonings. Mix well and cook on medium heat for 50 minutes. Stir frequently.
- Cook the rotini in boiling water for 8 minutes. Drain.
- Process the cream soup in a food processor until smooth and even consistency is obtained.
- Add the grated parmesan cheese and cream.
- Add the cooked rotini and serve hot.
