This recipe can also be done with Arctic Gardens Broccoli Spears or Arctic Gardens Medium Broccoli Florets .

Preparation

  1. Cut the eggplant into slices.
  2. In a braising pan, sauté vegetables in olive oil. Season.
  3. Add tomato sauce and remove from heat.
  4. Stir in basil.
  5. Cook pasta al dente, then immerse in ice water.
  6. In a large pan, add penne to the sauce. Add Parmigiano-Reggiano and drizzle with olive oil. Serve immediately.
