Ingredients

Turkey Meatballs

  • 5 lb. (2.25 kg) Ground turkey
  • 2½ cups (200 g) Panko breadcrumbs
  • 5 tbsp. (40 g) Grated parmesan
  • ½ cup (40 g) Chopped parsley
  • 2½ cups (225 g) Chopped onion
  • 5 tbsp. (30 g) Chopped garlic
  • 1 tbsp. (12 g) Salt
  • 1 tbsp. (2.5 g) Ground black pepper
  • 40 cups (10 L) Water

Primavera Sauce

Preparation

  1. Mix turkey ingredients together.
  2. Form into 25 g balls.
  3. Bring water to a boil in a saucepan, put in turkey meatballs, and simmer for 10 minutes or until the internal temperature of meatballs reaches 75°C (165°F). Keep warm.
  4. Pour vegetable mixture for spaghetti sauce and olive oil into another saucepan, cover, and cook for 3 minutes.
  5. Add tomato sauce and simmer for 20 minutes.
  6. Place four turkey meatballs on pasta and top with 100 ml of Primavera sauce.
