Provençal-style sautéed vegetables

Ingredients
- 3/4 cup (180 mL) olive oil
- 4 onions, minced
- 8 garlic cloves, minced
- 1 bag (2kg) Arctic Gardens sunrise blend
- 4 red peppers, cut into strips
- 4 medium zucchini, cut into half slices
- 4 cans crushed tomatoes (4 x 398 mL)
- 4 tsp (20 mL) herbs de Provence
- Salt, pepper
- Optional: pitted black olives, shaved Parmesan cheese
Preparation
1. Sauté onions and garlic in olive oil for 2 min.
2. Add vegetables and sauté over medium-high heat for 5 min.
3. Pour in crushed tomatoes and season with herbs, salt and pepper to taste. Simmer 15-20 min or until desired texture is reached.
4. If desired, garnish with olives and Parmesan cheese before serving.
Suggestion: for a saucier version, add more crushed tomatoes.
