Ingredients

  • 3/4 cup (180 mL) olive oil
  • 4 onions, minced
  • 8 garlic cloves, minced
  • 1 bag (2kg) Arctic Gardens sunrise blend
  • 4 red peppers, cut into strips
  • 4 medium zucchini, cut into half slices
  • 4 cans crushed tomatoes (4 x 398 mL)
  • 4 tsp (20 mL) herbs de Provence
  • Salt, pepper
  • Optional: pitted black olives, shaved Parmesan cheese

Preparation

1. Sauté onions and garlic in olive oil for 2 min.
2. Add vegetables and sauté over medium-high heat for 5 min.
3. Pour in crushed tomatoes and season with herbs, salt and pepper to taste. Simmer 15-20 min or until desired texture is reached.
4. If desired, garnish with olives and Parmesan cheese before serving.

Suggestion: for a saucier version, add more crushed tomatoes.
