Pumpkin and Leek Soup

Ingredients
- 4 L of chicken broth
- 1 kg of Arctic Gardens Leeks
- 4 (1 L) medium sized potatoes, diced
- 20 ml of salt
- 3 ml of pepper
- 2 L of Arctic Gardens Pumpkin Purée
- 500 ml of heavy cream
- 180 ml of fresh chopped parsley
Preparation
- In a large pot, bring to a boil chicken broth, leek, potatoes, salt and pepper.
- Simmer for about 15 minutes or until potatoes are cooked.
- Add the pumpkin purée and stir.
- With an electric mixer, reduce to a purée.
- Add cream and reheat.
- Rectify seasoning.
- Serve and garnish with parsley
