Preparation

  1. In a large pot, bring to a boil chicken broth, leek, potatoes, salt and pepper.
  2. Simmer for about 15 minutes or until potatoes are cooked.
  3. Add the pumpkin purée and stir.
  4. With an electric mixer, reduce to a purée.
  5. Add cream and reheat.
  6. Rectify seasoning.
  7. Serve and garnish with parsley
